People who have ridden the Mountain Challenge love the quick breads we offer. We need volunteers to bake the bread so riders won't be disappointed when they reach the rest stops this year. Bake some bread and get rid of those overripe bananas and piles of zucchini coming out of your garden. We have some volunteer bakers, but we still need more for the hundreds of hungry riders. Contact me by email or phone (688-5073) and let me know how many loaves you want to bake. Use your favorite recipe or use a mix.
If you don't have a recipe and don't like mixes here are a couple of recipes I like.
Banana Bread (1 loaf -doubles easily)
2 1/4 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/3 cup butter
3/4 cup sugar
2 eggs
1 cup mashed banana
1/4 cup buttermilk
1/2 tsp vanilla
Cream butter and sugar. Sift and measure flour. Measure all dry ingredients into a bowl and whisk to mix. Add eggs one at a time, beating well after each. Add buttermilk, vanilla, and banana. Fold in dry ingredients until just combined. Place in greased and floured 9" by 5" loaf pan. Bake in preheated 350 degree oven for about 1 hour, until toothpick comes out clean. Cool in pan 10 minutes and then remove from pan. Cool on rack.
Zucchini Bread (2 loaves)
Beat together until fluffy: 3 eggs, 1 cup vegetable oil, 1/4 cup cocoa, 2 cups sugar, and 1 tablespoon vanilla.
Add: 2 cups coarsely grated zucchini and 1/2 cup raisins.
Measure dry ingredients into a bowl and whisk together: 3 cups flour, 1/4 tsp baking powder, 1 tsp salt, 1 tsp baking soda,1 1/2 tsp cinnamon.
Grease and flour two 9" by 5" loaf pans. Place batter in pans and bake at 325 degrees for 1 hour or until a toothpick comes out clean.
